Crock Pot Chicken Soup

I took and adapted another recipe recently. Was spending some time on Skype the other day with two of my dearest friends from CA, and they were having crock pot chicken tortilla soup that sounded amazing. Here, again, is the original recipe, and then what I did to it.

CROCK POT CHICKEN SOUP

Ingredients:
1 lb boneless, skinless breasts cut into bite size pieces (I USED CHICKEN THIGHS TO INCREASE THE FAT)
1 c. chopped onion
2 tbsps ground cumin
1 tbsp chili powder (I USED CHIPOTLE CHILI POWDER BECAUSE THAT’S ALL I HAD)
2 tsps dried minced garlic
1/4 tsp salt
1/4 tsp ground cayenne pepper
1 can (28 oz) of diced tomatoes, undrained
1 carton (32 oz) chicken broth (4 cups)
1/2 c. chopped fresh cilantro (DIDN’T HAVE ANY, BUT WOULD HAVE USED IT IF I HAD)
1 CAN COCONUT MILK (TO UP THE FAT CONTENT)
Garnishes, if desired:
ROMANO CHEESE (again, what I had)
Cooking:
1.) Spray 3 1/2 to 4 quart slow cooker with cooking spray. In cooker, mix all soup ingredients except cilantro.
2.) Cover: cook on low heat setting 6-8 hours
3.) Stir in cilantro; cover and increase heat to high for 15 minutes
