Two questions came up about my weekend eating, so here are the recipes.
Paleo “Ice Cream” is just a can of coconut milk, some fruit, and vanilla extract blended together and frozen. Be sure to include it in your fruit intake for the day. We typically put in 1/2 a small bag to a bag of frozen fruit. There are fancier recipes where you do something with an egg over the stove to make it more like custard, but since we aren’t doing eggs right now, I didn’t look into it.
Sunshine sauce is one of Melicious’ creations. I couldn’t for the life of me find Coconut aminos. I went to three different health food stores looking for it. All I have left is Henry’s, Whole Foods, and Amazon. However, I had meatballs that needed some sauce, so I just made it without. It tasted just fine to us, and it’s super easy. I think it would be really good for a fondue night.
Directions: Blend all of the following together
2 tablespoons Sunbutter (plain, with no additional ingredients),
1 tablespoon lime juice
1/2 clove garlic, crushed
1/2 teaspoon chili-garlic paste
2 tablespoons coconut milk
2 tablespoons water
pinch dried ginger
Day 10! Look at you! 1/3 of the way done. It’s not so bad, is it? We’ve been exploring more and more recipes. We made chard for the first time. It’s ok, not super exciting, but not bad at all. More collard greens and some fried zucchini rounded out the loads of green veggies for the week. I don’t really have anything exciting to report. According to the real estate agent, the open house went well on Sunday. We’ll see if anyone makes an offer.
