Bacony Chicken

If you haven’t noticed yet, we eat mostly beef. This is for two basic reasons. 1) Chicken doesn’t have enough fat. I know you’re probably still thinking that’s good, but all it means to me is that I won’t feel full, and I’ll need to eat again soon. 2) The kind of chicken we buy is over $7 a pound. For still being hungry afterward, it’s not worth it to me most of the time. However, there are a few recipes that are tasty enough, and it’s always good to change things up.

This recipe comes from here. There are A LOT of recipes on that site, but for some reason I’ve never really made many of them.


-2 lb. chicken
-1/2 lb. bacon
-1 cup chicken broth


Cut bacon into 1/2 inch pieces.
-Cook in skillet and remove.
-Cook the chicken in the bacon fat and drain.
-Pour in the broth and heat to boil.
-Cover and simmer for 20-30 minutes.
-Serve covered with bacon
