This is one of our absolute favorite paleo meals. I think I got this one from Paleo Mama. We cook a HUGE pot worth and freeze a bunch.
-4 lb. ground beef
-2 lb. stew meat or steak
-2 cans of diced tomatoes and chilies
-2 large cans of diced tomatoes
-1 jar salsa
-2 onions, diced
-1/4 cup almond meal
-4 cups beef broth
-6 garlic cloves, minced
-4 tsp garlic powder
-2 tsp cinnamon
-4 tbs ground cumin
-8 tbs chili powder (We like it kind of hot. Reduce if you like mild chili.)
-Sear stew meat in coconut oil and remove from pot
-Brown onions in same pot. Add beef broth and let cook until reduced.
-Brown beef and add almond flour.
– Add garlic, spices, tomatoes, and stew meat
-Simmer on low heat for a few hours
-It’s super tasty served with some avocado in it as well
