Bacony Meatloaf

I took this recipe from Son of Grok, one of the first websites we looked at a year ago when switching to paleo.

Ingredients:

-1 can tomato paste
-1 red bell pepper, diced
-1 green bell pepper, diced
-2 lb. ground beef
-1 onion, diced
-2 tsp minced garlic
-2 eggs
-1 lb. bacon, chopped
-2 tsp pepper

Directions:

-Preheat oven to 375
-Mix all ingredients together by hand
-Shape into serving size loaves on a baking pan
-Bake for 45-60 minutes

    you and your bacon! 😛 I don’t know anyone even in the south who talks more about bacon. he he he. You’ll love Memphis, I’ll be sure to take you to get some of the best BBQ pig in the world.

      Sounds good to me! BBQ pork is tasty, but I’ll be happy to give it up for a few days while visiting you. I forget. Are You guys veggie, or halal meat eaters?
