Paleo Spaghetti

Another recipe I’m sure I stole. Unfortunately, I don’t know who I stole this one from, so I can’t give credit where it’s due. Who knows, maybe I figured it out on my own, but probably not. This one’s a nice way to sneak in some veggies in place of processed carbs/noodles.

Ingredients:

2 spaghetti squashes
2 lbs. ground beef
2 brown onion
4 tbsp. minced garlic
2 large cans crushed tomatoes
2 cans diced tomatoes, drained
garlic powder
onion powder
thyme
basil
oregano

Directions:

-Poke the squashes several times on the sides and put it in the microwave for about 8 minutes. Check it occasionally to see if it’s done. When finished, cut in half, squeeze out extra liquid, spoon out seeds, and scrape out the “spaghetti” into a dish.
-While the squash is in the microwave, brown the onion and garlic in some coconut oil. Once browned, add ground beef and brown.
-Add all other ingredients and simmer for a bit before serving over noodles.

    Not only did we make this dish last fall, but I found out this weekend that one of our favorite restaurants is now serving this!
